Queues snaking out of Roy Porter's on Saturday mornings attest to the popularity of this traditional village butcher. Customers come from far and wide to buy meat from mainly native breeds, which are sourced locally or from longstanding suppliers in Aberdeenshire, including Dexter, Hereford, Angus, Highland beef, Herdwick hogget and mutton lamb, Gloucester Old Spot, Tamworth and Saddleback pork, and you can always find in-season game. Excellent sourcing and hanging the beef and lamb for 21 days, and the pork for 10, achieve maximum tenderness and flavour. One of only 60 or so licensed organic butchers in the UK, Roy Porter’s is a haven of organic beef, lamb, pork, bacon and poultry. The majority of the bacon and ham is dry-cured on the premises and there are a dozen varieties of homemade sausage, as well as delicious hot and cold pies, homemade ready meals and a good range of cheese, including seven different kinds of Lancashire. Food for thought...
