This popular restaurant at the bottom of Berry Lane is an unassuming, bright and busy brasserie offering quality cooking from chef Alex Coward, who mixes traditional Lancashire fare with ethnic influences from his extensive travels and has built up a good local reputation from stints at the Last Drop Hotel in Bolton and the Foxfields Hotel in Langho.

At Thyme, you will find marriages of sea bass with pak choi, spicy lentil tomato and coriander soup, and a straightforward daytime menu, with something a bit more special in the evenings, as well as seasonal items. Local suppliers include Tina’s Corner Bakery, Ribble Farm Fare, the Ribblesdale Wine Company, Carefoot’s Butchers, cheese from Butler’s, meats from Brendan Anderton and Goosnargh duck. Poppies Flower Shop gets a special mention, too.

Food for thought…

  • Alex has his own Thyme beer, which is brewed at the Bank Top Brewery in his hometown of Bolton – and he goes back there for his fish from Openshaw’s. He often comes out to see how everyone is enjoying their meals and there is always a cheery greeting.
  • There is also a Thyme at Sirloin in Houghton if you are out that way and Alex does outside catering for weddings, marquee events and dinner parties.
